bananas and berries and pears, oh my
Another two-for. Must be the season of giving. AKA ALL SEASONS. That goes for the giving of thanks too. Yeah, I said it. Gifting gratitude. Gratuitous giving. Put that under your tree and smoke it. Or just feel it and be that warmth and light.
Speaking of such forces of nature, wtf is up with this so-called winter season? Though 75-degree Christmases may sound familiar to Floridians (and friendly to my sociability), a ways up the east coast my bare arms around the bonfire late night sense something a shade suspicious. Only but a red and gold poinsettia ribbon gift-wrapper wrapped around my neck and definitely an exposed upper ankle or two above a bright emerald green socked foot is more (less?) than I can claim from my memory of most years.

Another way to be and therefore share said warmth and light, whip up some of this love fest to follow. Despite the fact that pancakes are one of these things that I just never eat, by default but also by choice (I'm a hot 'whatever'-porridge-in-the-morning addict, don't judge...or do what you want), I can definitely revel in the face of a challenge. SO somehow I pulled this one off awhile back in response to a special friend's special request, and now PSA I am a (superfree™) pancake fanatic. Brunch mastered and minds blown, again.
And buckwheat. No wheat at all. All seed, actually. Grain-free? Absolut. Magic? Maybe.
Also full of easily-digestible proteins containing all 8 essential amino acids? Super.
Also on the 'yang' end of that spherical spectrum – aka warming aka perfect for comfort in the 'colder' months. Or for when the light is so sparse as it is innately when we are so near to this season's solstice (though PS things are finally lightening up, at least from this side of those things...). Eyes Wide.
BERRY BANANA BUCKWHEAT PANCAKES with
STEWED CINNAMON PEARS and toasted walnuts
(makes ~20 4" pancakes)
2 c buckwheat flour (if you're a *recovering* perfectionist like me you can make your own from raw buckwheat groats or even roasted ones, aka kasha)
1 c almond meal/flour
2 T tapioca flour/starch
2 t baking powder
¼ t fine Himalayan salt
1 t cinnamon
2 T coconut sugar
3 T flaxseed meal + 6-7 T warm water
1 t vanilla
1 c unsweetened almond milk
1 can full fat coconut milk
1 extra ripe banana, mashed (plus extra banana for slicing)
cold-pressed EVOO for the pan
2 c fresh or frozen organic blueberries
½ c raw walnuts, spread out on baking sheet and toasted at 350F for ~7 minutes (!burns quickly!)
3-4 ripe pears, peeled and chopped + 1 T coconut oil + 2 T maple syrup + 1 T cinnamon, simmered and stewed over low heat in a heavy-bottomed saucepan (~15 minutes to get really soft but not turn into complete mush)
more maple syrup for serving
more vanilla maple crème if you’re doing anything right in your life
/ MIX flours, baking soda, salt, cinnamon, and coconut sugar in a large bowl
/ STIR ground flaxseed into warm water vigorously in a small bowl (you are now laying flax egg twins, it's very sweet), set aside to incubate
/ BLEND vanilla, milks, and banana together in a processor OR via your muscles and a heavy spoon in a medium-sized bowl (doesn't need to be silky smooth by any means, also over-mixing is a thing not to do here)
/ ADD this wet mixture to the flour mixture, then add the flax eggs and stir to combine
/ ADD more plant milk if necessary – the batter should be very pourable
/ HEAT a non-stick or cast iron pan over a burner until the olive oil sizzles slightly
/ POUR batter onto well-oiled pan, approximately 4" in diameter
/ ONCE pancake starts bubbling ever so slightly, drop several blueberries on top
/ ADD thinly-sliced bananas as well, if desired
/ CAREFULLY lift up one edge with a thin spatula and if it comes off cleanly it is ready to flip
/ FLIP (just imagine you are dancing and your pancake is your partner – flooded with grace but never void of assertion)
/ AFTER a few seconds and up to a minute or so, press down lightly with the spatula to flatten the pancake, use your intuition here (it is truly invaluable)
/ AFTER a few minutes, again tapping into that intuition, remove perfect pancake from the pan and place on a covered plate to keep warm
/ REPEAT until all batter is used up (extra pancakes can be stored in fridge/freezer – the batter itself doesn’t keep so well BUT toasted leftover blueberry banana buckwheat pancakes – YUM)
/ STEW pears and TOAST walnuts as directed above (if you can handle it, do this simultaneously for time efficiency purposes)
/ PLATE these babe cakes on their plates like you mean it – top with vanilla crème, stewed pears, toasted walnuts, and a drizzle of maple syrup
