All hail the raw organic cashew. Soaked and squeezed. FULL of unsaturated fatty acids, these love nuggets are literally that -- heart happy. They also have high antioxidant activity. AND are magnesium rich. MONEY.

RAW CASHEW 'CHEESECAKES'
1 c Medjool dates (remove pits yourself!)
1 c raw walnuts (toasting optional)
1 c raw almonds (toasting optional)
½ c shredded coconut
juice from 1 meyer lemon
pink sea salt
1 c soaked raw cashews
¼ c maple or agave syrup
¼ c melted coconut oil
splash vanilla extract
juice from 2+ meyer lemons
pink sea salt
/ SOAK 1-2 cups of raw cashews overnight, or at least 6 hours. This will yield at least 2 cups after being soaked so you can make 2 rounds.
/ TOAST nuts for crust at 350 F for about 10-15 minutes. Watch closely as they will burn fast. (optional!)
/ GRIND nuts for crust in food processor down to a medium-sized crumble, do not blend too much or you’ll end up with nut butter.
/ ADD remaining ingredients gradually, until the texture is just so that it sticks together when you pinch it between your fingers.
/ BLEND all ingredients for the filling in a high-speed blender, ideally a Vitamix, until you get a very smooth creamy texture. Adjust the amount of citrus needed so it is just thin enough to blend consistently. Don’t worry if it seems a little thin, it will firm up in the refrigerator.
/ PRESS crust into bottom of jars or small spring-form pans, whatever you like really.
/ LAYER here with jam or fresh fruit puree or whatever, or don’t.
/ POUR cheesey-ness from blender into jars.
/ TOP with more fruit or shaved chocolate or nuts or nut butter or whatever, or don’t.

/ ADD dried cherries or other dried fruit in place of up to ½ c of dates

/ SUB cold brew coffee for part of citrus
