TRIPLE CHOCOLATE MINI 'CHEESECAKES'
hazelnut cacao crust // raw cacao fudge // chocolate cashew creme
use 'NO CHEESE NO CAKE' as a reference, make following amendments
/ SUB 1 c toasted hazelnuts* and 1 c toasted almonds (toasting optional)
/ ADD 4 T raw cacao powder
/ JUST a splash of meyer lemon juice
/ SUB juice of 1 blood orange
/ ADD 2 T raw cacao powder
>> OPTIONAL << layer raw cacao fudge (this is a secret, so sorry). For clean lines let harden in fridge before adding cheesecake, it's prettier.
TOP with shaved dark chocolate and fresh raspberries, or something.
*to toast hazelnuts: preheat oven to 350F. spread hazelnuts out on a cookie sheet lined with parchment paper. bake for up to 15 minutes, be careful not to burn as nuts tend to turn very quickly! remove from oven and pour into clean tea towel and cover. let them sit a few minutes to cool then rub them inside the towel to remove the skins. no worries if they don't all come off, removing the skins just makes the overall taste less bitter. okay good job.
