Pretty much genius. I've been making different variations on this theme for some time now but it's so simple and so good I just had to share with you because I love you that much. Wow. The above version via a summer stay in western Ireland (when in Rome...), the below from this Christmas just past – The ruby red raspberry jewels were a knock-out hit in the superfree™ 'it's all goodie' gift boxes and bags and jars and whatnot (HMU for custom customer orders xx). Maybe one day I'll share that recipe but I can't let that gold go just yet. Exceptions restricted to the sister and soon-to-be sister-in-law, both of which are obviously in the really in in crowd. Shhh.
SO we know about little chia babes, what I sometimes call my caviar. Don't worry about it. Blasé, as they say. AND we know about berries. These two peas basically being the definition of everything anti-inflammatory aka anti-disease – plenty omega-3's, anti-oxidants, polyphenols, our flavonoid friends, etc. Yay. Also pro-health due to what is not presently at play, that which may typically be, oka (otherwise known as) superfree. Get With Me.
We also may know that most 'jams', and definitely jellies (wtf is jelly anyways and who even likes to eat it ever, I don't like you. JK I maybe probably do...), are loaded with sugar. Why do we (wait who is 'we' anyway? The Modern Human? Regardless I stand solidarily separate from this second referral to the cohort that is of 'we'/'us'...) feel the need to add so much refined sugar and prescribe excess processing to whole foods that are naturally sweet delicious? In the case that your raspberries are slightly sour just maybe just a squeeze or two of some sort of sticky nectar will serve to accentuate the finest flavor (note *optional ingredient addition), but that's all we need babies. Whole foods. Happy tums. FEELINGS.
ANY BERRY CHIA JAM //
6 oz bag frozen organic blueberries/raspberries
1.5 T chia seeds
squeeze of fresh lemon juice
*OPTIONAL 2-4 T raw honey/agave/maple/date syrup (make your own), I say leave it out but to each his own, well, to a point...
/ DUMP berries in a heavy-bottomed sauce pan
/ SIMMER over med-low flame for a minute or two
/ ADD chia seeds
/ STIR frequently and reduce heat if bubbling too much (no berry burning)
/ SMASH berries with a wooden spoon or use a fork/banana masher to get an overall smoother product, if so desired (I like my jam lumpy, but ew I definitely hate that word)
/ TURN heat off and let sit for a few minutes to cool/jam-up
/ TRANSFER to a mason jar and place sealed in the fridge to store until you are ready to live your life fully
