not sure why i'm on a bread baking kick but here we are. gunner calls this gruel bread but he eats literal loaves at a time, so do with that information what you will. as in, make ! this ! bread! it is insane when you toast it and smother with Superfree Maca Butter. honestly, I'd have it no other way. this makes 4 mini loaves and they are amazing right out of the oven but keep well wrapped in foil in the fridge for whenever you need some super satiating, fiber rich delicious sustenance.
4.5 c organic, gf (glyphosate free) rolled oats
2.25 c* yogurt (we love culina plain and simple for this)
1 egg (or flax egg: 1.5 T ground flaxseed + 3-4 T filtered water)
1 c milk (I used Malk almond)
1 c raisins
2 t baking soda
2 t cinnamon
sea salt
seeds for topping - I have used pumpkin and black sesame – and some nice sea salt
*optional variation, add 2 small very ripe bananas and reduce yogurt to 1 c
bake at 400F in parchment lined loaf pans, I use mini loaf pans and do about 25 minutes.
35-45 min if you've got normal sized loaf pans, check halfway through and cover with foil if the top is browning quickly.
last step: enjoy. deeply.
